The Dutchess Stainless Steel Replacement Pan for the Dutchess Dough Divider measures 12-3 4 inches in diameter at the top (13-1 2 inches including the handle), 12-3 8 inches in diameter at the bottom, and 2-5 8 inches high.
To use the pan with the Dutchess bench model Dough Divider:
- Dust the pan lightly with flour and place the dough inside.
- Insert the pan into the divider under the cutting head, and pull down the operating handle to flatten and spread the dough across the bottom.
- Release the trip lever to activate the stainless steel knives. Pull the handle all the way down to cut through the dough, dividing it into equal parts.
- Raise the handle, and the spring action will hold the cutting head up, allowing the pan to be removed with the 36 evenly scaled pieces.
